When you’re doing your best to honor your efforts to eat healthier, but you need a little something sweet, there is nothing better than a treat that feels indulgent but leaves you feeling light. This Vanilla & Strawberry Chia Pudding is the ultimate “slow living” snack—simple to prepare, beautiful to look at, and incredibly satisfying.

It’s creamy, chilled, and has that perfect hint of sweetness that makes it feel much more like a decadent custard than a standard snack.

The Method

  1. Add your chia seeds, almond milk, stevia, and vanilla to a small jar. 
  2. Give it a good shake or stir, let it rest for a few minutes, then stir once more to ensure it’s well mixed. Put it in the fridge. After one hour, stir or shake it to evenly distribute the chia seeds (otherwise they’ll clump together at the bottom of the jar).
  3. Once set, layer the sliced strawberries on top. 
  4. Grab your favorite spoon, find a sunny corner, and enjoy your chilled treat.
